It is my desire to build a fleet of every type of 1/10 performance electric vehicle (4wd buggy, 2wd buggy, 2wd stadium truck, 2wd monster truck, 4wd monster truck, touring car, and pan car). I do not want to buy a radio for each one. I know some brands of radios have model memories. How does this work (receivers, etc etc)?

You buy a radio set for the first vehicle (ie Transmiter and reciever). Then you buy a new reiciever for each new car you get. Then on the tranmitter, you save multiple profiles and pick the one apropriate to the car you are driving at the time.

The JR R-1 has, I believe, 12 model memory, so does the Airtronics M8, as well as a KO Propo(Rail, which model was that one?), and the Multiplex 707 has 12 as well.
The Lynx 3D has a 10 model memory..

Which radio with model memory is the least expensive?
What if I just buy the same brand of receiver as my AM radio that I have now for each vehicle I buy? If I switch crystals each time I drive a different vehicle, wouldn't this work? Seems a lot less expensive. :D

That would work, but you'd have to reset your radio for the electronics of each vehicle every time you switched... The multiple model radios don't physically work any differently than the single model ones do for any one specific vehicle, the multiple model feature is simply the computerized saving of the specific individual settings for the electronics of multiple vehicles.. If you don't mind having to physically reset your radio settings every time you switch a vehicle a single model radio/switching crystals like you mentioned is very much okay..
