Do i have to use both motors in a Clod??

Could I just take a motor out, cover the casing where it used to be, and run it?
if i did, what would happen?

It won't have enough punch, You can also put a lot of strain on the motor and drivetrain.

Don't try it. I tried it when the front transmission gave out. It was slow, no acceleration, 2 wheel drive(stinks in a clodbuster) and it cant climb worth crap. I I had the same stock motor it came with so maybe a more powerful motor would help but still its bad for the transmission and motor. Its more than 10 pounds of heavy artillery and one motor just wont do.
