What has to be done to match cells? Do you just go through a lot of cells till you find some with similar characteristics? Also what makes matched cell so much better than unmatched cells? They last longer but why?

I believe that they usually first 'zap" the cell, which apparently gives them a higher average voltage, then they go through a cycling process, they charge, then discharge, the rates vary from company to company.
They do a cycle up to 10 or more times, and there is a battery matcher that is most used and most precise called a Turbo 4 Matcher. They find cells with similar characteristis, i.e. voltage, run time, Internal Resistance, and Mah.
Why do they last longer? I am not totally sure, because in this hobby, usually, you pay for what you get. I run matched cells, and love them.
