what is the best way to center a steering servo?

turn on radio
turn on reciever with servo plugged in
done
servos center themselves.

make sure the trim setting on the radio is centered as well. then you will have absolute center.

or what i do to make sure, is turn it left and right if its steering, or gas and brake with the throttle and let go and it centers

take the servo horn off the servo, turn everything on and set the trims to 0 neutral, the reposition the servo horn so there is no steering, (or no gas and no brake foe the throttle),,
thats the best way to center it to absolute 0°

Set all trim adjustments on radio first, then move to esc setup if you are using the battery pack to power the servo as well or use a receiver pack to setup steering servo (throttle if gas). Read, reread the manual and write down little notes for specfic functions and write down the settings you start with. Attach the servo savor to servo and install in vehicle, if tires aren't pointing straight adjust the linkage (bell crank, tie rods, camber rods) until tires are pointing in desired direction.
