Does a LRP 7.1 do well with a Stock motor?

Yes, any of the top-end ESC's will do great with a stock motor. The only ones that may be less than ideal are ones that have a higher "On" resistance. With higher resistance, more of the battery's voltage will be lost on the way to the motor, which means it'll make less power, & less speed.... :)
