What is a heat sink and what does it do?

A heatsink is usually a finned object made of aluminum or other heat conducting material that attaches to a known heat source such as nitro engine heads and electric motors to create a larger surface area in order to dissipate heat. Pentium computers come with fans and heatsinks on them to cool them down. The finned part of the head on a nitro engine is a type of heatsink.

All microprocessors have heatsinks nowadays. You'll even see big ole heatsinks on your video card (if it's not too old).

Try running an athlon without a heatsink... you'll see how important those things are once the processor burns up... ;)

Don't forget the thermal paste or tape! I use the stuff on all my RC heatsinks. It dropped 12 degrees F on my Tbird, so it should help a bit with RC ESC's and motors.
