Can you trim out the body before you paint it? The reason I am asking this is because every time I trim out a body I always mess up the paint job, I am sort of pickey about the way my bodies look.

yup,
alot of folks cut first and paint later, I paint first and cut later. Just which ever you prefer.
Alot of discussion has been devoted to this very subject. A search will show numerous results.

I cut before I paint mainly because like you said, I dont want to mess up the paint. Some folks cut afterwards. Whatever floats you boat! :D

The overspray won't get all over the body?

Most bodies have a protective film on the ouside to prevent that. This film won't come off when you cut the body. The bodies that don't have the film you can easily clean the body with alcohol or cover it with cling wrap or liquid masking.
