Is there something that you can buy that replaces the servo with just an on/off switch? I could rig something up with micro switches and a servo to turn them on, but I was wondering if there is already something out there that will perform this function.
I've been looking for something like this, too. I have thought of a benefit of using the servo arm-microswitch method though: you can control two devices. Depending on which way you turn the servo, you can turn on or off a second device.

These setups are used all the time in drag racing. Instant full throttle.

Hey Gubbs...
I drag raced last summer with a guy named Roy Anderson. He hooked me up with a car and let me race a season. I am a nitro junky myself, but had a blast with the drag racing. Do you know Roy? and have you participated in the races?

it's simple to make a servo turn a switch on and off.
The way I understand you guys is this: You want a servo on say, channel 3 to move a switch that would turn on and off somthing like lights, etc...
The better way to do this is to completely take the servo out of the system, and make a solid state swiching circuit. All it takes is a transistor or two, and maybe a relay to turn on really big loads like a modified motor.. I hope I'm on the right track

Yes, like you describe, 3rd channel to turn something like lights on and off.
I was thinking more along the lines of what Blackwolf had to say. Something that would eliminate the servo and replace it with a unit with some type of relay switch which is more light and hopefully more reliable (because no moving parts). Although, if I had to build something from scratch with Radio Shack parts, I would probably choose and trust my chances with servo and microswitch rather than build some type of electronic gadget. I was hoping some company already took the time and made that electronic gadget for us. But if drag racers still use servo and microswitch, I guess no company ever made such a device yet.
