Needle settings... my owners manual for my G260PUM says High - 1-5/8 turns Low - 1 turns. Does this mean... i turn that many times out after screwing the high and low needle valves all the way down... then back them out to what they say?
Also... im new to zenoah engines, and im not 100% sure how i know when they are running correctly and the carb is set right. I have no other boats to base it off of... anyone know what i should look for?

Answer to question #1, yes. When we refer to the needle settings on gas or nitro boats, we go so many turns from fully seated. Don't over tighten them.
One good way to see it the mixture is good is to look at the spark plug.

I got another Q. My boat right now keeps pulling to the left... i try and adjust it with my trim on the rudder but it doesnt seem to straighten it out at high speeds, Could this be that my trim tabs are not trimmed equally? Or could it be the torque of my engine doing this at the high speeds?

Both possibly or one of the above. Check you rudder onshore to see where it's at, a degree or so off can make it go left. Having the trim tabs off a little on the port side could be a problem also but you would get more lean before it turning left. Check the strut also for any twist in it or if it's not square with the transom. It could be more severe as a bad spot in the hull.
I was thinking a dull prop but usually they'll make it go over to the right.
