I'm a newbie at rc cars and wanted to know what type of bodies will fit a Tamiya XBG CLK-DTM Vodafone AMG Mercedes? Also bodies can be adjusted to your preference right, such has lowering the body to give the effect of a lowered car or raising it a tad for ground clearance? I noticed some cars I've seen have a gap between the tires and body and soem cars I've seen have no gap at all, which give that lowered car look which I like.

Yes any 200mm body will fit that chassie. and you can use the body postes to change the hight of the body.

I was just reading the description of the car and it comes with a 190mm body already. Will 200mm also fit?

yes it will fit but the body will stick out 5mm on each side.

Will the 5mm affect the look of the car? I mean will the rims/tires be hidden by the body?

If it's an electric then the body is 190mm and just about any 190mm body. There are a few exceptions where the car has a 200mm rear and 190mm front and/or a short wheelbase like some of the Porsche bodies from Tamiya but not many. If it's the nitro car you want to be looking for a 200mm body.
