FM stands for Frequency Modulation and AM stands for Amplitude Modulation.
The difference is exactly like that in your car, but more technically the signal strength is more important in AM, as the amplitude or strength suggests. The difference in amplitude gives the input. In FM as long as it is receiving a signal it is receiving the correct signal and amplitude has nothing to due with it.
Very simply FM is better, just like a radio-but AM works well in most conditions.

To your next question: FM, and AM operate on the same type of frequency channels 75MHz 61-90. Yes, an AM will still interfear with an FM on the same frequency (channel). That is why if you race you cannot have two people with the same channel no matter if its FM, or AM. But As the other posts have replied, FM is better due to it being harder for the frequency wave being interfeared with by a cell phone, garage door opener, ect. If your looking at getting a radio system, an regular AM will do just fine, but If you have the extra money an FM system is a safe guard against glitches, and run away cars.
