I have a 27Mhz radio. Can I simply buy 75Mhz crystals and will it then work on 75Mhz?

No, you have to use 27 mHz crystals. Unfortunately, if you want to use 75 mHz frequencies, you'll have to get a 75 band radio. If you have a radio with an interchangeable module, you could swap it and get a new receiver, but all other radios can't be changed.
