I have only run electric. The idea of braking in an ESC for nitro makes sense to me; they have actual brakes, right? But how does braking apply to running electric, if it does?

If you are asking about how the brakes work in an ESC I think it runs an alternating current (AC) through the motor to stop it but I can't be sure maybe some else knows.

The ESC internally switches the connections on your motor, which turns your motor into a generator. Since generators take torque to generate electricity, it causes drag which slows down your wheels.
