how does changing your shock pistons effect the handling characteristics of your car. ie: if I put pistons with larger holes than my stock one, how would it effect the handling.

it would make your shock react faster(same as putting lighter oil in) and i think it also gets stiff as you go up

Larger holes make the shocks react faster, smaller ones slower, and yeah it's the same effect as heavier or lighter oils. If you're consistently finding your shocks are too stiff or too soft with the range of oils you have, rather than buying more oil weights you can just change the piston holes all around.
Another effect is it changes the "speed" as the shock compresses (I think this is what tnx is getting at with "goes up.") As the piston compresses to the top of the body, there's an increased resistance that equalizes faster or slower depending on the hole size. The effect, though, is still similar to a heavier or lighter weight.
