Are you planning on racing or bashing? GP3300's are by the far best cell out there right now. If you plan on racing, you should probably opt for matched packs if your budget allows. If you are just playing in the backyard, some unmatched GP3300's will provide plenty of runtime and punch.

If your racing get matched packs if you can. You say you're going to be racing against nitros? Why is that?

Equipment including batteries specs would depend on the level of competition for offroad you could get by with ordinary GP3300 which still have plenty of juice for stock racing. It could even work has your level of driving and skills improved to the point all you may need is one or two matched packs say to run for TQ position and the main. I run oval, when cells drop a bit they are used in stock offroad and TC. The GP3300 isn't a bad cell from the start so for match cells I buy according to the numbers and price so I use different brands but try to stick to 1 or 3.
SMC Racing, Pro Match, TQ Cells, SRC, Integy, B & T Racing and a couple of others.

First, I said I thought I would be racing nitros because my lhs that own the track doesn't have that much for electric (enough for me to keep on runnig :D ). Also, would these do?

I don't know a lot about that pack but I do know epic puts out some pretty good stuff. I also highly recommend that you put different plugs like deans or powerpoles. Even if you are not racing you should still replace the plugs because the tamiya connectors have a lot of resistance and will hurt your run time and they will eventually melt.

How do i do that?

The battery pack you linked to is just a cheap stick pack. I had a few of those a long time ago and they work great for bashing, but lack the punch needed for racing. Just fork over the extra $10-$15 and get matched packs. You will not regret it.
DaleJrFan8 has a good point. You don't want to use the cheap, white "Standard" connectors that are on your truck now. You should replace those connectors with Deans Ultra Plugs. The Deans Plugs have much lower resistance.

Do I have to solder anything when I make a stick pack?

If you buy matched packs, you will need to solder them together, unless you have them assembled for you.

All the suggestions and recommendations would be of no use if there is no electric class to race in. However to help save time and give you ideas try these.
A. use standard lose GP3300 cells to make your own packs into a sude by side configuration (if you have a good soldering iron) you will also need to buy some single cell shrink (trinity sell them in pkg) battery bars, Deans 2.0 or 3.0 pkg or 5, 25 or 100, wire (available in pkg or 2ft red/black or in length for LHS) connectors Dean or Sermos (red/black plastic housing) are cheaper and easier to buy and use. For entry level use, there is no real difference in using a standard unmatched vs matched cell especially for club or entry level racing.
B. If you are not comfortable with soldering and building your own packs the preassembled packs are the way to go. The umatched will be cheaper, saving you money on other items as mentioned change the Tamiya style connector to a better one, remove one pin or cut the wire one at a time to prevent a short. Remove 1/8in or insulation and solder to a better style connector that was mentioned above (Dean or Sermos/referred to a power pole). Install the same connectors or appropiate one on your esc and motors.
There are matched stick (SMC is also a reputable and good) packs, again that come with Tamiya connectors that need to be changed for almost any type of RC use. Matched cells are really not going show that much of a improvement for club level racing or persons who are racing with limited experience or driving skills. The money saved buying standard cells could be used for other items, but as the competitiveness of racers improve or more become involved in electric racing then matched cells would be of some benefit. Matched cells won't last any longer than unmatched just charge and perform a little better because they start out being more alike in voltage.
You find a better pack of SMC either in matched form for 39.99 or less, Pro Match is selling GP3300 in bulk form with 24 cell costing 88.99 plus shipping good enough for club or practice packs. Cells are from those that didn't make their Team cell requirements ranging from 1.15 average voltage to a few 1.16 runtime 390 to 410+ could make one decent pack out of them.

Surge Battery Matching (http://www.surgebatterymatching.com) has the best matched cells I've used thus far. (And I've used a lot of them!!) They are the most closely matched (runtime, voltage and internal resistance!) and their prices are way better then most of the matchers out there.
